The default tier and the Recommended badge

Quick answer: In Settings → Model Preferences, one tier per category carries a Recommended badge: the tier the site suggests for most finished work in that category. It changes nothing by itself. The default tier carries no badge; it is simply the tier you are on until you pick another, and the one the site falls back to if the tier you picked is withdrawn. Your own choice overrides both.

The default tier

Three jobs, no badge. It is the tier a new account starts on for that category. It is the tier used when you have never picked one. And it is the tier the site falls back to when the tier you picked no longer exists, with the price on the generate button updated to match.

The Recommended badge

Advice, shown as a badge in the Settings list. It marks the tier the site suggests for a typical keeper — a 720P segment to share, a Pro image tier for faces, a base-rate text tier for a hard episode. Nothing is switched for you; you pick it when you want it. The editor’s tier menu shows no badges.

The First one free badge

A second badge you may see: First one free. It appears on the default text tier while the free storyboard for episode 1 of your first project is still unused, and disappears once it is used. The free storyboard only applies on that tier.

How your choice fits

Settings → Model Preferences holds one choice per category. For video, the tier button in the episode editor changes the same setting. Whatever you pick wins over the default, and picking the Recommended tier there is all it takes to make it your everyday tier.
